Bowl of Goodness
Ingredients:
- 1 c. quinoa cooked
- 1/4 c. sliced radishes
- ¼ c. sliced broccoli
- ¼ c. chickpeas
- 2 tsp. chopped scallions
Dressing Ingredients:
- ⅓ c tahini
- 2 tbsp water
- 2 tsbp lemon juice
- 1 clove garlic
- 1 tsp parsley
- Salt and pepper to taste
Procedure:
- Put all of your ingredients in a bowl
- Put all of the dressing ingredients in a bowl, whisk until smooth.
- Pour dressing into bowl of goodness and enjoy.
Sweet Potato Quesadilla
Serves 2
Ingredients:
- 2 tortilla wraps
- ¾ c shredded pepper jack cheese
- ½ c. Black Beans
- 1 cooked sweet potato
- ½ c. spinach
- ¼ c. chopped onion
- 1 tsp paprika
- Pinch of salt
- 1 tsp chili powder
Procedure:
- Heat a frying pan with a little olive oil.
- Mash the sweet potato until smooth. Add paprika, salt, chili powder, and onions. Spread evenly onto one tortilla wrap.
- Layer the spinach, black beans, and cheese on top of the sweet potato and cover with the second tortilla wrap.
- Place tortilla cheese side down onto the frying pan
- Heat for 2 minutes, until cheese is melted, flip and cook for another 2 minutes.
- Take off the heat, cut it in quarters and enjoy!
